The Last Supper
The Clean, Renewable and Environmental Opportunities (CREO) Syndicate was behind the “Last Supper,” a must-attend event held in October at the Caisse de dépôt et placement du Québec. Our mission: to create a menu featuring ingredients that, due to climate change, have been hard to procure.
On offer: a gourmet smorgasbord of oysters, scallops, asparagus with truffle juice, tomato chutney and saffron tuile, Îles de la Madeleine lobster tails, Western Canadian morel mushroom cream—all ingredients that could easily disappear from our plates. An innovative way to showcase environmental issues that directly impact what we eat.
